Ruhlman's Twenty + Blue Star Vermont giveaway
So, it’s January. Maybe you made resolutions. Maybe you just hoped for better. Maybe your credit card bill just appeared in your inbox. Whatever the case, learning to cook more wholesome, simple ingredient foods for ourselves (and others) is something on many of our lists.
I like Ruhlman’s style. He’s straightforward, practical, think-centric. No, not overthink-your-chicken, but instead, think about these (twenty) basic methods/ingredients and feel more empowered in the kitchen. I also like how he teams up with his wife (photographer and graphic designer) to make his books. (I appreciate my in-house photographer/computer genius partner every. single. day.)

I like how he physically shows you some of the steps, like with the oft elusive bread making.
I appreciate these well-documented basics that many people (with cooking backgrounds) take for granted. If no one has ever shown you what something is supposed to look like, then how are we visual folks to succeed?

Megan contacted me and told me about how she and her twin sister, Molly, started a hand-crafted, vintage apron sewing business in Vermont, Blue Star Vermont.
My twin sister and I began a sewing program for women in prison. There we saw the healing power of someone learning she can sew an “outa here bag” to have when she walked out those prison doors. As a handwork teacher in a Vermont Waldorf school I have loved teaching children how to knit, sew, felt, and weave, but more importantly, helping to instill in them at a very young age that they can make and do whatever they decide to do.
Working on my knitting while sitting in waiting rooms or public places, I am often stopped by someone who looks at my project in the making and says, “I could never do that.” My reply, is “Of course you can, if you want to.”

Moreover, I think anyone who’s going to be spending time in the kitchen (men included) might enjoy a hand-crafted apron in the mix. I have quite a few of these, actually (what does that say about me?). The one I use for days when I'm in the house for a couple hours to cook but want to get something everyone loves on the table without work is Grandmaw Peacock's Chicken and Rice, from Scott Peacock & Edna Lewis's The Gift of Southern Cooking. I usually make it with some bay and thyme and celery seed instead of the celery, and I normally make it with just chicken thighs.
And my go-to unexpected company dinner -- I can make it, including the grocery run for whatever I'm missing, in one hour -- is a blanched asparagus salad with roasted red peppers and goat cheese, broiled tilapia with lemon and parsley, a rice pilaf, and a big Greek salad.
Peanut Noodles! Homemade peanut sauce, noodles, whatever veg I have around.
Do I have to just choose one? We have such wide weather swings in texas so..........I always have parbaked pizza crusts. I also always have frozen soup that can be thawed and reheated with either sandwiches on hand or herbed popobers (elegant but disgustingly easy). If I have more time theres roast checken and if i'm dead and ready to be carried out, theres french toast, sausage and fruit.
Linguine and clam sauce. This is a staple of my mom's and it's super simple, tasty and fast as long as you have canned clams in the pantry. Which I always do of course!
Breakfast cereal if I'm alone - shrimp, tomatoes, edamame, onions and spices over Pearl couscous if I'm not.
My go-to dinner is a Korean side-dish called Dubu Chorim (Pan-fried Tofu in Soy Sauce). I add steamed broccoli, caramelized onion and shiitake mushrooms to make it a full meal for two pictured here: https://twitter.com/#!/fetosoap/media/slideshowurl=http%3A%2F%2Ftwitpic.com%2F85hf9v. I always have small boxes of tofu in the cupboard that I buy by the dozen and frozen broccoli in the freezer so I don't have to worry about running to the store for specialty ingredients.
Sadly, most of my family and friends do not cook so they are ecstatic just to get a home-cooked meal, regardless of what it is! However, if I had to identify a specific thing, my best friend loves my red beans and rice while my Mom likes it when I make her breakfast for dinner (especially juevos rancheros).
My go to thing to make are sincronizadas. Heat 2 tortillas, then put melty cheese (mozzarella works fine, but for traditional flavor, nothing like queso Oaxaca) and a slice of ham between these. Heat till the tortillas are crispy. Serve with salsa on top and you're in for a treat!

If I have time for a quick stop at the grocery, it's fish (like trout, or tiliapia), whatever green veggie looks good, and rice.
Toast some basmati or jasmine rice in a little olive oil in the saucepan. Add water, cover and turn to low. It usually only takes about 15 minutes this way.
Steam or saute the green veggie.
Salt, pepper on the fish. You can add a little dried herb mix like 'fines herbs' if you want. Put it in a skillet with a little liquid (I like vermouth). Cover and cook for a few minutes (depends on thickness of fish).
Plate it all together with a squeeze of lemon and some butter. Mmmm.
